Quick and Easy vegan Strawberry Jam

so, Jenni is a “at home” vegan or at least that is what she calls herself, and I am a all food eater ( I don’t discriminate so long as it tastes good.)

but, I happened to think of pretty good vegan strawberry jam recipe and I figured I’d share it with you.

Vegan Strawberry Jam

1 cup mashed strawberries ( I like to get mine from a farmers market, but a local grocery store will do)

2 tbsp Chia Seeds (ask your local grocer where you can find these)

2 tbsp of water

1 tbsp of maple syrup (now don’t use any of that crap with high fructose corn-syrup in it, go for the natural it is sweet and absolutely amazing)

so, in a small bowl add the seeds and water and let it soak while you mash the berries.  Add the Chia seed/water mixture to the mashed strawberries and stir well.  Add the maple syrup to taste, if you have sweet strawberries the 1tbsp will be enough, but if they are a little more tart add more as needed. Refrigerate for at least 30 minutes, but over night tastes the best.
